Walking Tacos

A quick and flavorful walking tacos recipe made with lean turkey, lentils, beans, and taco seasoning. This heart-smart twist on a classic family favorite cooks in about 20 minutes and doubles as either fun walking tacos for kids or a taco salad bowl for adults.

Ingredients
  

For Taco Filling
1 lb 93% lean ground turkey
1 can lentils, drained and rinsed
1 can black beans, drained and rinsed
1 can corn, drained
1 can Rotel tomatoes, undrained
1 cup salsa
Seasoning Blend
1 ½ tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
½ tsp oregano
½ tsp salt
½ tsp black pepper
Optional
¼ tsp cayenne pepper for heat
For Serving
Doritos (variety of flavors)
Shredded lettuce
Shredded cheese
Guacamole
Greek yogurt (instead of sour cream)

Equipment

  • 1 large skillet or cast iron pan
  • 1 can opener
  • 1 strainer
  • 1 stirring spooon
  • 1 meat masher optional, but breaks meat quickly

Method
 

Cook the Turkey
    Heat a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart as it cooks.
      Add the Seasoning
        Sprinkle in the chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, and pepper. Stir well to coat the meat.
          Add the hearty ingredients
            Stir in the lentils, black beans, corn, Rotel, and salsa.
              Simmer
                Let everything simmer for about 5–8 minutes until warmed through and slightly thickened.
                  Taste and adjust seasoning if needed.
