Slow Cooker Buffalo Chicken and Beans

The back-to-routine dinner that basically makes itself

Ingredients
  

  • 2-3 boneless chicken breast
  • 15 oz can of black beans
  • 15 oz can of cannelloni beans (I used 2 cans since I didn't have black beans on hand)
  • 1 cup buffalo chicken sauce
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 2-3 oz Greek yogurt optional for extra creaminess

Method
 

  1. Place chicken breast in the slow cooker
  2. Add drained beans on top
  3. Pour buffalo sauce and chicken broth over everything.
  4. Sprinkle seasonings.
  5. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Shred chicken directly in the slow cooker.
  7. Stir in Greek yogurt if using before serving.
