Healthy Taco Soup with Ground Turkey

This healthy taco soup comes together in one pot and is ready in 30 minutes.

Ingredients
  

  • 1 lb ground turkey 93% lean
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2-3 cloves garlic minced
  • 1 15. oz can black beans drained & rinsed
  • 1 15 oz can pinto beans drained & rinsed
  • 1 15 oz can corn fresh or frozen
  • 1 28 oz can crushed tomatoes
  • 1 10 oz can diced tomatoes wiith green chilies
  • 2-4 cups low-sodium chicken broth adjust to preference
  • 1 tbsp tomato paste
Seasonings
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • ½ tsp black pepper

Method
 

  1. Heat olive oil in a large pot. Sauté onion and bell pepper until softened.
  2. Add garlic and cook 30 seconds.
  3. Add ground turkey and cook until browned.
  4. Stir in spices and tomato paste; cook 1–2 minutes.
  5. Add tomatoes, beans, corn, and broth.
  6. Simmer 15–20 minutes.
  7. Taste, adjust seasoning, and finish with lime if desired.
