Ingredients
  

Soup Base
  • 1 lb lean ground pork or ground chicken
  • 6 cups low sodium chicken broth
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Noodles & Vegetables
  • 6 –8 oz ramen or wonton noodles
  • 2 cups baby bok choy or spinach
  • 1 cup shredded carrots
  • 3 green onions sliced
Optional
  • 1/2 lb shrimp tossed in near end to prevent toughness
  • chili crisp
  • sesame seeds
  • extra green onions

Method
 

Cook the meat
  1. In a large pot over medium heat, cook the ground pork while breaking it into small pieces.
  2. Add garlic and ginger and cook until fragrant.
Build the broth
  1. Pour in chicken broth, soy sauce, rice vinegar, and sesame oil.
  2. Bring to a gentle simmer.
Cook the noodles
  1. Add noodles and cook according to package directions.
  2. Add vegetables
  3. Stir in bok choy and carrots during the last minute of cooking.
Finish the soup
  1. Taste the broth and adjust seasoning if needed. Top bowls with green onions and sesame seeds.
