Preheat oven to 425°F.
In a large bowl, toss chicken thighs with olive oil, onion powder, garlic, smoked paprika, Italian seasoning, salt, and pepper.
Spread onto a sheet pan and bake for about 22–25 minutes, or until cooked through and lightly caramelized around the edges.
Let the chicken rest for a few minutes before chopping into bite-sized pieces.
In a small bowl, mix Caesar dressing with chickpeas.
Assemble wraps with lettuce, tomatoes, chicken, Caesar chickpeas, and chopped bacon.
Wrap tightly and serve warm.
