Chicken Caesar Wraps with Chickpeas

These homemade chicken Caesar wraps are packed with paprika-seasoned chicken thighs, crispy bacon, crunchy romaine, cucumbers, tomatoes, golden croutons, and a creamy chickpea Caesar dressing all wrapped in a soft tortilla. They’re flavorful, filling, and realistic for busy weeknights when everyone’s hungry and you still want dinner to feel a little special without a lot of extra work.

Ingredients
  

For the Chicken
7 boneless skinless chicken thighs
2 tablespoons olive oil
3 teaspoons onion powder
3 garlic cloves, minced
3 teaspoons smoked paprika
1½ teaspoons Italian seasoning
1½ teaspoons salt
1 teaspoon black pepper
For Serving:
Large wraps or tortillas
Chopped romaine lettuce
Chopped tomatoes
Caesar dressing
Chickpeas
Cooked bacon, chopped
Optional:
Parmesan cheese
Crunchy roasted chickpeas
Red onion
Avocado

Method
 

Preheat oven to 425°F.
    In a large bowl, toss chicken thighs with olive oil, onion powder, garlic, smoked paprika, Italian seasoning, salt, and pepper.
      Spread onto a sheet pan and bake for about 22–25 minutes, or until cooked through and lightly caramelized around the edges.
        Let the chicken rest for a few minutes before chopping into bite-sized pieces.
          In a small bowl, mix Caesar dressing with chickpeas.
            Assemble wraps with lettuce, tomatoes, chicken, Caesar chickpeas, and chopped bacon.
              Wrap tightly and serve warm.
